Cilantro Lime Rice with Avocado – Family recipes and a few of my own

3 cooks cooked instant rice (cook in chicken broth instead of water for a much better flavor)

2 large Avocados 2 Tablespoons fresh squeezed Lime juice 1 Tablespoon Cumin 1/8 cup fresh chopped Cilantro 1/2 teaspoon pepper 1 teaspoon salt

2 Roma Tomatoes ( seeded and evenly diced )

Mash Avocados and mix in the Lime juice, cumin, cilantro, salt and pepper. Mix well ! Fold mixture into warm cooked rice and fold until creamy and completely green. Gently mix in half of the tomatoes until mixed well then top with remaining tomatoes …
