Cheese and Bacon Stuffed Sweet Peppers – Recipes from the Carolina Boondocks
I found these beautiful sweet peppers at Lidl the other day and I have been trying to figure out what I wanted to make with them. I really didn’t want to cut them up and just add them do a dish, I wanted them to BE the dish…..bacon, you can’t go wrong with bacon right? A little cream cheese and a little bacon make these guys POP! I am so happy with how they turned out and I will definitely be making them again… I even have ideas in store for the holidays too… stay tuned for that! Hint: pumpkins are involved!

Ingredients
- 7 sweet mini peppers
- 4 ounces cream cheese ( softened)
- 3 tablespoons green onions, sliced small
- 5 to 6 slices of low sodium bacon, fried and chopped
- 1 tsp minced garlic
- 3/4 cup cheddar cheese ( reserve 1/3 cup)
- 1 teaspoon Worcestershire sauce
*cilantro and lime for serving ( both optional)
Heat oven to 400 degrees
In a bowl combine the cream cheese, onions, bacon, garlic cheddar and Worcestershire until well combined.
Slice the peppers and clean out the seeds.
Using a spoon, fill each “boat” with the cream cheese mixture and set on a non stick pan sprayed with cooking spray. Top each pepper with a bit more of the cheddar and bake for 10 to 13 minutes, until bubbly….
Serve immediately and top with cilantro and lime juice if desired.
It’s just that easy…
